An unexpected and captivating pairing — creamy sheep's milk cheese meets the deep, complex notes of aged Spanish red wine. The rind of this remarkable specialty cheese is washed and matured with red wine, which slowly permeates the paste to deliver a subtly tannic, fruit-forward depth that complements the cheese's natural richness.

Crafted by Don Apolonio in the tradition of Spain's artisan cheese-makers, each wedge offers a balance of savoury, slightly sharp sheep's milk and the warming character of a fine red — making it a centrepiece of any cheese board, or a perfect companion to a glass of Tempranillo or Garnacha.

Variation of the olive

Picual extra virgin olive oil is known for its bold flavour, characterised by bitterness and spiciness, along with its greenish hue. Additionally, it offers high resistance to oxidation and performs exceptionally well at high cooking temperatures. This is a very stable oil with excellent preservation capacity.

From an organoleptic perspective, Picual oils are fruity with green olive notes and herbal aromas of fig tree, olive leaf, grass, and tomato, accompanied by their distinctive bitterness and spiciness.
