Ingredients
Pasteurised sheep's milk, salt, animal rennet and lactic ferments; rind washed with red wine. Preservative: potassium nitrate (E-252).

The Curing
As the cheese ages, its rind is repeatedly washed with Spanish red wine, which slowly soaks into the paste. The result is a striking wine-stained rind and a gentle, fruit-forward depth that runs beneath the savoury richness of the sheep’s milk.

The Raw Ingredient
The base is a wheel of pure Manchega sheep’s-milk cheese — rich, buttery and savoury. It is the ideal canvas for the red wine that will slowly work its way in during maturation.
