Crafted in the tradition of Castilla-La Mancha's finest cheese-makers, this Reserva-aged sheep's milk cheese from Don Apolonio is a true expression of slow, patient artisanship. Made from pasteurised sheep's milk and aged for a minimum of 15 months, it develops an intense, full-bodied flavour with a firm yet smooth texture and a deep, aromatic character.

Ingredients
Pasteurised sheep's milk, salt, animal rennet and lactic ferments. Preservative: potassium nitrate (E-252). The rind is treated to prevent mould (E-235) and is not edible.

The Curing
This wheel is carried to cool, still cellars and left to rest for more than fifteen months. Over that long, patient maturation the paste turns firm and crystalline, and the flavour deepens into the intense, lingering character that defines a true reserva.

The Raw Ingredient
Everything begins with the milk of the native Manchega ewe — naturally rich and high in fat and protein. It is this exceptional milk that can withstand such a long maturation and reward it with so much flavour.
